Mark your calendars and plan on supporting Collins Children’s Home through our annual chicken dinner fundraiser on Saturday, September 25th, from 4-7 PM.
We will again be doing drive-through⎯pick-up ONLY at our Collins Home campus located at 110 Collins Home Drive, Seneca, SC 29672.
We are looking forward to serving 1,500 plates complete with ½ Chicken Slow Grilled – Baked Beans – Cole Slaw – Potato Chips – Roll – Pickles – Iced Tea/Lemonade and Cookies.

Mr. Joe's Secret Sauce
Although we are looking forward to another fantastic BBQ event this year, it won’t be the same without our co-founder, Mr. Joe Rackley, who passed away last October.
He played such an integral part in this event and, over many years, perfected the slow-grilling process, in addition to preparing batches and batches of sauces until he got “Mr. Joe’s Secret Sauce” recipe just right. But that was Joe; he felt anything worth doing was worth doing right.
Anne recently shared that Joe would make her leave the kitchen when he was adding the final ingredients to his secret sauce,
In his later years, it was getting difficult for Joe to make the sauce on his own. Anne was "allowed" to participate in the process. She would stand on a ladder to stir the sauce.
Even when Anne bought all the ingredients and helped make the sauce, Joe would tell her to leave the kitchen as he added the final spices. He had a lot of fun around the secrecy of his recipe.
The process of making the sauce is complex. Eventually, Anne convinced Joe; it was time to find some help to create the secret recipe.
Kaye Gibson knew how challenging it was for Joe and Anne to make the sauce as they were getting older. So she suggested her husband, Richard, could help take on the tradition. Joe agreed.
Richard Gibson watched Anne make the recipe. Then, Richard used his engineering mind to come up with ways to perfect the sauce-making process.
Now Richard and Kaye Gibson are keeping Joe's tradition alive.
The Secret Recipe Lives On
Soon it will be time for Richard and Kaye to retrieve the mouth-watering, secret recipe from the safe (the recipe is really in the safe.) and lovingly prepare it just the way Joe did, so you and I can continue to enjoy the best slow-grilled chicken around.
